Peanut Butter Protein Cake



Attention, busy moms! Check out this super simple grab-and-go meal that takes literally less than five minutes to prepare and cook. This Peanut Butter Protein Cake makes for a great anytime snack and is especially great for a convenient breakfast. As a busy mom, simple and convenient has been my mantra, and so this Peanut Butter Protein Cake has been a new favorite— it is so easy to make and tastes so good! And with fewer than 150 calories, it’s a very light and satisfying meal.

Peanut Butter Protein Cake - Prepare in Under 5 Minutes!

Peanut Butter Protein Cake


1 tbsp coconut flour
2 tbsp vanilla protein powder
1 tbsp peanut flour or powdered peanut butter
1/2 tsp baking powder
3 packets Stevia
1 egg white
2 tbsp unsweetened vanilla almond milk
1 tsp vanilla extract
1 tbsp water
1 tbsp sliced almonds
1 tsp cinnamon
Coconut oil cooking spray


Spray a microwave-safe bowl with coconut oil spray. In a separate bowl, add coconut flour, protein powder, peanut flour or powdered peanut butter, baking powder and 1 packet of stevia. Mix well. Add egg white, almond milk, vanilla extract and water, and mix together. Pour into microwave-safe bowl sprayed with coconut oil spray (mix will be the same consistency as a dough). Microwave for 1 minute and 20 seconds. Remove from microwave and allow to sit and cool. While cake is cooling, spray sauté pan with coconut oil spray. Place sliced almonds, 1 packet of stevia and cinnamon to pan and pan fry until almonds are golden and toasted. Set aside. Remove cooled cake from bowl and place on a plate. Pour toasted almonds over top and enjoy!
